Vegan Honey Cake

Honey cake for vegans, without honey? Yes!
What’s more, I’ve enriched it with a divine Naked Noble cream, dried fruits, and nuts. Here’s the recipe:

Ingredients:

  • 200 g wholemeal spelt flour
  • 200 g plain flour
  • 4 tbsp date syrup or rice syrup
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tbsp freshly squeezed lemon juice
  • 100 ml melted coconut oil
  • 2 jars of Naked Noble hazelnut cream
  • 2 handfuls of chopped nuts (I used half walnuts and half almonds)
  • 3–4 dates, chopped
  • 3–4 dried apricots, chopped

Preparation:
Knead the ingredients for the dough into a soft mass. If necessary, add a little water. Let it rest for 1 hour, then divide it into two parts and bake on baking paper–lined trays.

For the filling, melt the Naked Noble Hazelnut Creams to a spreadable consistency. Chop the nuts and dried fruits and add them to the cream. Mix well, then spread between the two cake layers. You can also spread some on top, and optionally drizzle with rice syrup—but this step can be skipped.

This dough recipe also works perfectly for a layered honey cream cake: in that case, divide the dough into four parts and bake four thin sheets.
